Newsletter - Summer Edition 2016

Hong Kong is getting hotter recently, leaving me no doubt that it’s summer time again. Are you ready with your swimsuit, sunglasses, shorts? What else? Oh, of course we can’t forget wine for summer. What will you drink? See if you can get some inspirations from below.

Vinexpo 2016

I want to share with you my visit to Vinexpo in Hong Kong last week. Vinexpo is an international wine fair for trade visitors only. Wineries around the world will showcase their best collection of wines. I always look for some small and independent wineries from Spain and talk to them because normally the owner or winemaker will be there. It is so enjoyable to talk to them while tasting their wine. However there are so many of them I can’t taste them all. Among the one I’ve tasted, these three are my favourite wineries - Bodega Cerrón from Jumilla, Bodegas Vegalfaro from Requena and Mas d’en Gil from Priorat. I hope we can find their wine here soon. Of course, chatting with old friends from the wineries is always a highlight of Vinexpo too.

Summer food and wine pairing

No doubt white wine is the best choice for summer wine, but Rosé is also a good choice, to pair with cold meat dish like beef salad with Thai dressing. How about red wine? Sure, you can choose some light body wine such as wine made from Tempranillo grape and chilled it to around 8 degree and it will be a perfect wine for barbecue.

Have you tasted Fino sherry before? It is fortified wine from Jerez. It is named Manzanilla if the Fino come from Sanlucar de Barrameda. Jerez and Sanlucar both are the wine region of Andalusia in South of Spain. Fino is a dry wine with sharp and delicate bouquet of almonds, with a hint of fresh dough and wild herbs. It gives you a dry, fresh but complex feel on the palate. Fino sherry goes well with all types of tapas, ham and nuts. It can also pair with shellfish and fish. Some aged Fino sherry is more complex and you need a big white wine glass to enjoy it. You will find Fino sherry an amazing wine for summer time. Summer Salad Recipe

I want to share with you my favourite salad that I learn from the picnic last year in Tomàs Cusiné vineyards. I made it many time and always find it refreshing specially in Summer time. And it is so easy to make. Let's try. I twist a bit by adding thin sliced fennel into this salad. You can add if you like fennel.

Ingredients ( for 4 person)

1 bottle of bean in olive oil (you can find it in Gourmet store)

1 pack of fresh french bean

half lemon

sea salt and freshly ground black pepper

1 tbsp chopped fresh mint leaves

1 tbsp chopped Spanish ham 


1. Bring a saucepan of salted water to the boil, add the beans and cook for 3-4 minutes, or until tender. Put them in the ice water for a while then drain.

2. Cut the bean into half and put in a salad bowl.

3. Add the whole bottle of bean in the salad bowl but only half the oil.

4. put the chopped mints leave, Spanish ham and Squeeze the lemon juice. Season, mix well and serve.

New arrival: Tomas Cusine

Tomàs Cusiné winery is located in the village of El Vilosell, at the southern end of the Designation of Origin Costers del Segre, Catalunya. They are famous in Japan and Taiwan, not only for the high quality of their wine, but also for the beautiful wine label. For example, the wine with Tempranillo called Llebre has a drawing of two hares on the label. But why hare? Because Llebre means hare in Catalan and Tempranillo, also called Ull de llebre, also mean the eyes of hare. We introduce four wines from Tomàs Cusiné this time, one white wine, Auzells, and three red wine, Llebre, Vilosell and Geol. Last time we paired the wine with Huaiyang cuisine. Amazing! it's so matched with the wine.

New arrival: Bodegas Inteus

Bodega Inteus is a special wine from Rioja Alavesa which traditionally has more small and independent wineries. Bodegas Inteus is a new winery but the vineyard is old and using ecological method in all time. The winemaker and owner is a rock singer and he always seek for new ways to present his wine. We are introducing a series called “ENTRAÑAS”, which includes five red wines. They are Latido, Suspiro, Guiño, Instinto and Carácter, which mean ‘(Heart) Beat’, ‘Sigh’, ‘Wink’, ‘Instinct’, and ‘Character’ respectively. Latido, Suspiro and Guiño are made from Tempranillo grape. Instinto is made from Tempranillo Peludo (hairy Tempranillo) and Character is made from Graciano. These wines extract most of the fruitiness from the grapes but remain complex. They are organic certified wine. These wines will soon be in the online store. Stay tune.
