"This is not Cava, this is the sparkling wine from D.O. Penedès". This statement had been mentioned many times from the friend in the winery when I was there. Indeed they withdraw their sparkling wine from D.O. CAVA few year before. First, because they use organic viticulture. Second, they age the wine longer. 

All grapes are manual harvest. Ageing with lees at 16ºC following the "Champenoise" traditional method. Bottle ageing more than 30 months. The organic viticulture, old vines and long bottle aging make really different to other Cava. White flower with fresh herbs and green apple aroma. A great dry sparkling wine with fine bubbles and stone fruit on the mouth. It goes very well with seafood or spicy Thai food. Or just drink it when you need a spark at night.
