Description

Patinegro is a young and dry unfortified white wine newly introduced by Barbadillo. It is made from 100% organic palomino fino grape from two organic vineyards. The grapes harvest in late August and vinified separately to obtain a unique blend. The wine was aged for four months in stainless steel with lees then further a year in Manzanilla oak cask to give soft saline nuance.

Patinegro is bright golden in color with ripe fruit, nutty, and spicy notes. On tasting, it is creamy, with light notes of ripe fruit, and a soft saline nuance.

This wine can pair with fish dishes. The last time I baked the razor clam with garlic, the sweetness of the clam is well combined with Patinegro. However, with the round, creamy, and umami on the palate, try tofu, artichokes, or cheese.

Barbadillo In Singular is a small project of Bodegas Barbadillo, one of the pivotal roles of sherry production in Spain.
