Have you heard of Toto Barbadillo? It's a sparkling wine from Cádiz that's primarily made with palomino grapes grown on albariza soils using the traditional method. After a 20-month second fermentation in the bottle, it becomes a dry wine with subtle notes of apple and candy on the nose. It's incredibly refreshing and pairs well with Oyster and Salmon. You might even want to try it with sushi!

Barbadillo In Singular is a small project of Bodegas Barbadillo, one of the pivotal roles of sherry production in Spain.
