This is a very fine and elegant dry sherry. Grape variety is Palomino Fino 100%. Only produce 4000 bottles per year.

The NV Tradicion Amontillado VORS, certainly has the more complex and subtle nose of all these VORS and is on average 45 years old. It has a very clean nose, with elegance and complexity, powerful but subtle notes of hazelnuts, honey and even some dates. The medium-bodied palate shows a sharp wine with strong salinity, it has the power and the lightness, in a very difficult combination. Drink 2013-2020. - Aug 2013
For all its gustative characteristics, amontillado is a wine which requires dishes of strong contrasts, such as pickles (gherkins, olives, aubergines from Almagro), salted fish (such as anchovies or cod), smoked fish (sturgeon, eel and tuna fish), caviar, and herring and, of course, vinegar dominant dishes, such as pickled food and spicy dishes like those of oriental cuisine.
