This sherry blend with 70% of Palomino fino and 30% Pedro Ximenez.
In the sherry dictionary, Cream is referring to a medium sweet sherry that blending dry sherry such as Oloroso with Pedro Ximenez (PX). It was very popular in the 1950s but now become an old fashion sweet wine in the bar due to the bad quality cream flood into the market. However, the best Cream can come from the best Oloroso and best PX. You should not ignore this kind of sweet wine but only need to select carefully.
Tradicion Cream is a good example. They blend in some flamboyant, youthfully fruity PX into our ancient dry, nutty Oloroso to create this Cream. The flavor complexity from this improper marriage is outrageous. You will find very powerful nutty notes along with fruity aromas; raisins, figs, and plums all joined in a superb mixture of dried fruits. It is very smooth, with a feel of soft texture, dense but lighter at a time on the palate. It has a dry component that produces a very intense sensation which is lightened by the sweet and fresh side of this old wine resulting in a refreshing finish.
It goes very well with an orange dessert e.g. the Crêpe Suzette (thin pancake swimming on orange juice and orange liquor), Orange chocolate cake. It can enjoy alone. This is a ladies like sweet wine for sure!
