Grape: 100% palomino fino

20 months under flor - 9 months in sherry casks plus 11 months in vat

This wine is made from 100% Palomino Fino grapes fermented to reach 11.5% alcohol and aged for a total of 20 months under flor but not adding any alcohol. It tastes like a very dry white wine with a flor influence on the nose and palate.

I have tasted this wine recently with friends. I found it very interesting as the aroma shows a yeasty and nutty flavor suggesting a sherry for sure. But when taste, it is very light, dry with no fruit also suggesting it is sherry wine but more smooth as the alcohol level is lower than normal fortified sherry which is 15% and more.

Good drink as an aperitif and a flexible wine goes with many dishes.

Equipo Navazos is famous among the sherry world. Founded by a group of Spanish sherry lovers led by wine writer Jesús Barquín, a professor of criminology and Andalusian wine expert/ writer, and Eduardo Ojeda, the technical director of Grupo Estévez. They search around the old bodegas in the sherry region. When they rediscover the great sherry wine still in the barrel but no commercial interest due to low volume, they bottle the sherry and name "La Bota". The first bottle is named "La Bota de Amontillado / Navazos n°1". This year they celebrate their 15th year and their "La Bota de Manzanilla Pasada 100"
