"Gonzalez Byass Fino Dos Palmas" is eight years old Fino. At this stage, the flor layer will have started to thin out, and the flavors are more concentrated compared to a younger Fino.
Strong marks of flor even only 8 years aging with huge notes of iodine on the nose. Yeasty notes with some hay, hazelnut. Quite full-bodied, more viscous than a regular Fino, but still very dry, savory, with a soft peppery edge. Very mineral finish.
Fino pairs very well with simply cooking shellfish, but this age fino can pair more complex dishes, for example, seafood cooked with heavy sauces.
