Description

Grapes varties: 100% Palamino Fino


Nose: not a classic yeast-driven nose, but one with some intense fruity elements (melons, apples) and lots of savory notes (herbs, some vegetal / soy sauce, curry), and some walnuts too. A vivid nose, but very elegant at the same time.


Mouth: powerful and forthcoming. Lots of fruits still (melons, quinces) with nice acidity. Some nuts (almonds, hazelnuts), nice mineral notes, and a balanced bitterness certainly hint towards a standard Fino. Excellent balance of fruits and minerals, very juicy and fresh, with a long finish.


Description:

This Fino sherry is an unfortified vintage Fino produced with 100% Palamino Fino grapes from the El Corregidor vineyard. To reach the 15% alcohol level, the winemaker, Willy Pérez, decided to harvest later, carefully selected the grapes, and put them under the sun for 6-7 hours. These methods were used in the past but lost recently. 

Grape clusters are accurately selected according to their ripeness and crushed on a basket press with a limited 35% rate of must-output. The grape juice is then set directly into American oak casks without any racking to undergo natural fermentation until December next year. After racking wine off the lees in February, wines are classified as Fino or Oloroso sherry. 

In the case of La Barajuela Fino biological maturing system, casks are also filled to a higher level to have less flor influence and less evaporation of alcohol.

Bodegas Luis Pérez is a family owned winery in Jerez. Although the bodegas were founded in 2002, the family has been in Jerez for a few generations. They started to produce sherry in 2013 only from the vineyard El Corregidor. Their objective is Jerez wine should return to the vineyard, not at the bodegas.
