Description

The Finca Serral de Vell blend is composed of 87% Xarel.lo and 13% Macabeo, with no added sugar. This particular wine originates from a solitary vineyard that has soil with a high concentration of calcium carbonate (33% active limestone), providing the wine with a lively and distinct salty flavour. The vineyard aims to highlight the soil's essence in this wine, resulting in a more focused and refined taste with a heightened sense of tension and elegance that comes from ageing with the lees. The acidity is well-balanced, and it acquires a hint of liquorice with time in the glass. It was disgorged after 56 months sur lie due to high demand.

Recaredo is the leading producer of sparkling wine in Spain. It’s a family-owned winery that started working organically in 2004 and then in biodynamics in 2006, for which they obtained the full Demeter certification in 2010, the first in their region. They only use autochthonous grape varieties, harvest the grapes by hand, and age their wines for a minimum of 30 months with the lees in the bottle, using a natural cork.
