Description
The 2021 Dido Blanc is a white wine made with a combination of Macabeo, Garnacha Blanca, and Cartoixà (Xarel.lo) grapes. It was fermented in various types of containers such as foudres, concrete, and some barriques. The wine matured for about a year in these containers. During the fermentation process, a small amount of skin contact was done with the Macabeo grape, which was lesser than the previous year's process. The wine has a distinct limestone chalkiness and profound stony sensations. The use of oak in the wine is insignificant and not noticeable.
